Confession: I never had Elote a.k.a. Mexican Street Corn, until I was a full blown adult. I was legit married with kids when I had my first one. And of course it was at my first Summer Fair in Northern California. I literally became hooked, right then and there. So much so, that through trial and error, I have found a way to extend those flavors to other vegetables that I love. My Quick and Easy Elote Spread does the trick every time to make an instant Mexican Street Corn.
What is Elote
Elote is a Mexican corn dish that usually consist of corn (of course), mayo, crema or sour cream, chili powder, pretty much any Mexican cheese, lime, and cilantro.
Orgins of recipe
This spread came together when I wanted a shortcut to making Mexican Street Corn (Elote). I had a house full of guests coming over for a barbecue, and I wanted them to have the flavors of the dish without having to do all the work. Just grill your corn, slather on the elote spread, and top with Mexican cheese and cilantro. You are good to go!

- Total Time: 2 minutes
Ingredients
2 sticks salted butter
1c mayonnaise
1tbs smoked paprika
1/2tsp sugar (optional)
Instructions
Mix all ingredients until they are completely blended.
Done!
Notes
To stiffen, refrigerate for about 30 minutes.
