It’s that time of year again, Summer fun is coming to an end, the kids are going back to school, the weather is changing, and getting back into the everyday routines of life are inevitable. This year is a bit different because for a lot of us the kids are staying home to virtually learn. Since everyone in my family has to stay in the house and get back to routines together, I thought I’d share my simple recipe for Quick and Easy Harvest Pasta, which has been a complete game changer in assisting my family to stay on track.

My Quick and Easy Harvest Pasta checks all of the boxes to my current needs. For bonus points, it taste best when consumed at room temperature, so members of my family can grab their portion whenever their schedule permits for lunchtime. Usually Harper and I eat lunch when Harper is done with her half day virtual school schedule. Harvey and Ivey eat their lunch together a little earlier, right before Ivey’s nap time.
Ingredients needed for Quick and Easy Harvest Pasta
All of the ingredients needed for this recipe can be purchased from one of my favorite grocery stores, ALDI. They have an array of products that can help you get back into your routines and stay on budget. If you don’t have time to go into the store, ALDI offers a new service called Curbside Pickup, or you can place a grocery delivery order from them through Instacart. To make my Harvest Pasta, you only need to add a handful of items to your grocery list.
- Reggano Penne Rigate Pasta
- Red Apples
- Happy Farms Preferred Blue Cheese Crumbles
- Southern Grove Pecans
- Southern Grove Dried Cranberries
- Simply Nature Organic Aged Balsamic Vinaigrette

Ingredients
1box Reggano Penne Rigate Pasta
2–3 diced red apples
1 8oz container of Happy Farms Preferred Blue Cheese Crumbles
1c Southern Grove Pecan Halves
1/2c Southern Grove Dried Cranberries
1tsp salt
1/2tsp white or black pepper
1tsp dried oregano
1 bottle of Simply Nature Organic Aged Balsamic Vinaigrette
Instructions
Cook Reggano Penne Rigate Pasta according to instructions located on the back of the package.
Once pasta is cooked, drain and transfer to a large bowl.
To the bowl add remaining ingredients.
Give everything a good toss, and enjoy!
