Ingredients
1–2lbs Chicken Breast, cut into small pieces or strips
1.5c Caesar Dressing, divided
1c Bread Crumbs
1c Texas toast breadcrumbs, crushed
1c Parmesan Cheese, finely grated
Lemon wedges for garnish
Instructions
Preheat oven to 425 degrees
Add chicken to a freezer bag or bowl with a cover and mix with half of your Caesar dressing.
Let your chicken marinate for 20-30 minutes.
In another bag or bowl mix breadcrumbs, croutons, and parmesan cheese.
Place each piece of chicken in the breadcrumb mixture, then place on a lined baking sheet. Make sure your chicken pieces are not touching.
Bake for 28-30 minutes, or until completely cooked. Flip chicken half way through baking so that it can crisp on all sides.
Let chicken cool for 2-3 minutes.
Serve in pita pockets with lettuce, parmesan cheese, and more dressing or enjoy by themselves.
