When HLN asked me to bring some of my favorite cocktail recipes that I love to entertain with, to Weekend Express. I knew instantly that I’d be sharing my Blueberry Thyme Lemonade Spritzer recipe because it’s always a hit with any crowd.
Rightfully so, this drink should get all the glory, because it’s flavor notes are so in sync, that it gives you a perfect drink to sip on all day. The crazy part, is that it doesn’t even contain alcohol. Yes, that’s nuts to me, because I’m definitely that person who likes to have a little tequila or vodka with each sip. Although this drink doesn’t need any alcohol, you can totally add a little gin or vodka to each individual serving, so that the option is available when entertaining.
Blueberry Thyme Simple Syrup
This drink is all about the Blueberry Thyme Simple Syrup. And, I’m serious because you cannot make this drink without this ingredient. (So there’s that lol)

Ingredients
2c Sugar
2c Water
2c Fresh Blueberries
5–8 Sprigs of Fresh Thyme
Instructions
In a large sauce pan, bring all ingredients to a boil.
Lower heat to medium low.
Carefully mash blueberries.
Let mixture simmer for about 5 minutes.
Pour everything in the pot through a cheese cloth or colander.
Discard remaining blueberries and thyme.
Store simple syrup in an air tight container, and place in a refrigerator for up to 2 weeks.
- When making a simple syrup, you always need equal parts of sugar and water. In this recipe, you use 2 cups of sugar, therefore you will need to use 2 cups of water.
- When adding a fruit flavor to a simple syrup, it’s safe to use the same amount of fruit. So, in this recipe we will use 2 cups of fresh blueberries.
- Because herbs can quickly become over powering when cooking, we’re just going to use 5-8 sprigs of thyme. If you love thyme, please feel free to add a few more sprigs. I personally would not do more than 12.
- Total Time: 5 minutes
- Yield: 6–8 cups 1x
Ingredients
1c Blueberry Thyme Simple Syrup
2 Lemons (juiced)
1–2 Liters Soda Water
2–3c of Ice
Use fresh blueberries, sprigs of thyme, and sliced lemons as a garnish
Instructions
In a larger pitcher, mix Blueberry Thyme Simple Syrup and Lemon Juice.
Pour ice into pitcher.
Fill the pitcher with soda water and mix well.
Garnish individual glasses with fresh blueberries, sprigs of thyme, and sliced lemons.
