Easy Chicken Rigatoni One Pot Meal
My Chicken Rigatoni One Pot Meal came to the rescue again! When it comes to dinner, my husband Harvey is typically the one to take over. He loves to cook, he does it well, and he along with the kids, always seems to be hungry. That makes Harvey the “go-to” for meals around the Daniels house. However, there are some occasions when he can’t get to it and that’s where I step in. When it’s Mommy’s night to cook, you know that its going to be something simple, drool worthy, and has little clean up. To check those boxes, I always have a one skillet meal in my back pocket. For those nights when I must prove myself worthy to the family, my back pocket meals always come in handy. Last night, I made my Chicken Rigatoni One Pot Meal and of course it was a big hit! With this dish I absolutely proved myself worthy of using the title “Family Dinner Maker”.

Ingredients
- 2 tbs olive oil
- 1.25 lb chicken breast cubed
- 1/2 tbs salt
- 1/2 tbs pepper
- 1/2 tbs oregano
- 3-4 sprigs of thyme
- 1 zucchini medium and thinly sliced
- 1 summer squash medium and thinly sliced
- 1 onion small and thinly sliced
- 1 c cherry tomatoes
- 2 c baby spinach
- 3 c dried rigatoni
- 1 1/2 c chicken broth
- 1/2 c heavy whipping cream
- 3/4 c Shredded Parmesan
