Ingredients
2 tbs olive oil
1.25lb chicken breast cubed
1/2 tbs salt
1/2 tbs pepper
1/2 tbs oregano
3–4 sprigs of thyme
1 zucchini medium and thinly sliced
1 summer squash medium and thinly sliced
1 onion small and thinly sliced
1c cherry tomatoes
2c baby spinach
3c dried rigatoni
1 1/2c chicken broth
1/2c heavy whipping cream
3/4c Shredded Parmesan
Instructions
Heat a large skillet or pot to medium high
Add 1tbs of olive oil
Sauté chicken and 1/2 of the seasoning
(Chicken does not have to be well done because you will be adding it back to the skillet soon)
Remove chicken and place to the side
Add another tablespoon of olive oil to the skillet/pot
Sauté sliced zucchini, squash, and onions
Stir in cherry tomatoes and spinach, mix well
Add dried rigatoni
Pour in broth and cream
Add chicken back to the skillet/pot
Simmer for an additional 20 minutes or until noodles are tender
Melt parmesan over pasta and serve
