Dipped Roast Beef Sandwiches: A Protein-Packed Comfort Food You’ll Love

Ingredients

23lbs Chuck Beef

3tbs Butter

2tsp Salt

2tsp Garlic Powder

1tsp Black Pepper

1sp Onion Powder

2packet Beef Onion Soup Mix

2sprigs of Rosemary

2sprigs of Thyme

3c Beef Stock

For the Spread

1/2c Mayonnaise

1tbs Dijon Mustard

1tsp Horseradish 

Salt and Pepper to taste

To make the sandwich:

French Bread

Swiss Cheese

Provolone Cheese


Instructions

Step 1: Sear the Beef

  1. Turn on your pressure cooker and set it to the “Sauté” function.

  2. Add 3 tbsp butter and let it melt.

  3. Season the chuck roast with 2 tsp salt, 2 tsp garlic powder, 1 tsp black pepper, and 1 tsp onion powder.

  4. Place the chuck roast in the pressure cooker and sear on all sides until it forms a golden-brown crust (about 4-5 minutes per side). This step locks in the flavor.

Step 2: Add Seasonings and Liquid

  1. Once the beef is seared, add 2 packets of beef onion soup mix, 2 sprigs of rosemary, and 2 sprigs of thyme.

  2. Pour in 3 cups of beef stock, ensuring the beef is mostly submerged.

Step 3: Pressure Cook

  1. Close the lid and set the pressure cooker to “High Pressure” for 60 minutes.

  2. After cooking, allow the pressure to release naturally for 10-15 minutes, then perform a quick release.

Step 4: Shred the Beef

  1. Remove the chuck roast and use two forks to shred it into bite-sized pieces.

  2. Return the shredded beef to the pot to keep it warm in the flavorful au jus.

Step 5: Make the Spread

  1. In a small bowl, mix 1/2 cup mayonnaise, 1 tbsp Dijon mustard, 1 tsp horseradish, and salt and pepper to taste.

  2. Set the spread aside for assembling the sandwiches.

Step 6: Assemble the Sandwiches

  1. Slice the French bread in half lengthwise and spread the prepared mayo mixture on both sides.

  2. Layer the shredded beef onto the bread.

  3. Add slices of Swiss cheese and provolone cheese on top of the beef.

  4. Place the assembled sandwiches on a baking sheet and broil in the oven for 2-3 minutes, or until the cheese is melted and bubbly.

Step 7: Serve with Au Jus

  1. Slice the sandwiches into portions and serve hot with a small bowl of au jus for dipping.

  2. Enjoy the hearty, protein-packed meal!
