Greek Guacamole

Ingredients

1 avocado

8-10 cherry tomatoes, diced

1/4 of a cucumber, diced

2 tablespoons red onion, diced

8-10 Kalamata olives

2-3 tablespoons vegan feta crumbs or regular feta

1 lime, juiced

Drizzle of extra virgin olive oil

1 tablespoon cilantro or parsley, mincedPinch of sea salt, black pepper, and oregano


Instructions

  1. Start with the avocado: Make sure your avocado is ripe. Nobody wants to deal with a chunky or underripe avocado. Cut it in half, remove the pit, and scoop the flesh into a bowl.
  2. Add the diced veggies: Toss in your diced cherry tomatoes, cucumber, and red onion. These ingredients provide the perfect mix of textures and flavors.
  3. Include the olives: Kalamata olives are a must-have in any Greek-inspired dish. Their briny, salty flavor elevates this guacamole.
  4. Squeeze the lime: Fresh lime juice adds a bright tang that balances the richness of the avocado.
  5. Drizzle with olive oil: A little bit of extra virgin olive oil adds a silky richness and enhances the Mediterranean vibe.
  6. Top it with feta: Whether you’re using vegan feta or regular feta, sprinkle it generously over the mix.
  7. Season it well: Add a pinch of sea salt, black pepper, and oregano to bring out the flavors. Freshly minced cilantro or parsley adds the final touch.
  8. Mix everything gently: Be careful not to overmix. You want the ingredients to be well combined but still maintain some texture.
