Ingredients
1–2lbs Chicken of Choice (I prefer chicken thigh)
1c Soy Sauce
1/2c Rice Wine Vinegar
1/2 Extra Virgin Olive Oil
1c Honey
6–8 Cloves of Garlic, chopped
2tsp Salt
1tsp Pepper
1tsp Onion Powder
1sp Smoked Paprika
1 lime juiced
Instructions
Start by mixing all the ingredients—except the chicken—in a bowl. This flavorful blend of honey, soy sauce, rice wine vinegar, olive oil, garlic, salt, pepper, onion powder, and smoked paprika will serve as both the marinade and sauce.
Scoop out a cup of the marinade and set it aside for later use. Add the raw chicken and any vegetables you’d like to cook (bell peppers, broccoli, and carrots work well) to the remaining marinade. Allow it to marinate for at least 30 minutes to absorb the flavors.
Preheat your grill or grill pan. Cook the marinated chicken until it’s fully cooked through and has a nice char. This usually takes about 6-8 minutes per side, depending on the thickness of the chicken.
Serve the grilled chicken over a bed of rice along with your chosen vegetables. Drizzle the reserved marinade over the top and garnish with chopped green onions for a fresh finish.
