The Legacy of Southern Butter Crackers
Southern Butter Crackers have long been a staple in Southern cuisine, celebrated for their simplicity and unforgettable taste. The origins of these crackers date back to family kitchens where hospitality and comfort food go hand-in-hand. They’ve become a must-have for game day spreads across the South. My husband Harvey first introduced me to these delightful snacks after tasting them at a renowned Atlanta Country Club. Since then, they’ve become a household favorite that we can’t resist.
What ingredients do you need to make Southern Butter Crackers?
Before you can enjoy these delectable crackers, you’ll need to gather your ingredients and kitchen tools. Here’s what you’ll need:
- 3 sticks of Unsalted Extra Creamy Butter (or 1 cup of ghee)
- 1 tablespoon Everything Bagel Seasoning
- 1/2 tablespoon Dried Oregano
- 1/2 tablespoon Dried Thyme
- 1/2 tablespoon Fresh or Dried Rosemary
- 2 sleeves of Saltine Crackers
How to make Ghee
Ingredients:
- 3 sticks of unsalted butter
Tools Needed:
- A heavy-bottomed saucepan
- A fine mesh strainer or cheesecloth
- A clean, heatproof jar or container
- Prepare the Butter:
- Unwrap the 3 sticks of unsalted butter and cut them into smaller pieces for even melting.
- Melt the Butter:
- Place the butter pieces into a heavy-bottomed saucepan.
- Turn the heat to medium and allow the butter to melt completely. This will take about 5-7 minutes.
- Simmer the Butter:
- Once the butter is melted, reduce the heat to low. The butter will start to bubble and foam.
- Continue simmering the butter on low heat. You’ll notice three distinct layers forming: a foamy layer on top, clear golden liquid in the middle, and milk solids settling at the bottom.
- Cook Until Golden:
- Allow the butter to simmer gently for about 15-20 minutes. The foam will start to subside, and the milk solids will turn a light brown color, giving off a nutty aroma.
- Keep a close eye on the butter, stirring occasionally to ensure it doesn’t burn.
- Check for Doneness:
- When the liquid turns a clear, deep golden color, and the milk solids are browned but not burnt, the ghee is ready. You should be able to see through the clear liquid to the bottom of the pan.
- Strain the Ghee:
- Remove the saucepan from the heat and let it cool for a few minutes.
- Carefully strain the ghee through a fine mesh strainer or cheesecloth into a clean, heatproof jar or container. This will separate the clear liquid ghee from the browned milk solids.
- Store the Ghee:
- Let the ghee cool completely before sealing the jar. Once cooled, it will solidify slightly, becoming a soft golden spread.
- Ghee can be stored at room temperature for up to 3 months, or in the refrigerator for up to a year.
- Use the Ghee:
- Your homemade ghee is now ready to use! It’s perfect for cooking, baking, or even as a spread.

- Seal the bag and shake it well to ensure all the ingredients are thoroughly mixed together.
