Ingredients

- Herb Sauce
- 2 bunches of parsley
- 1tbs minced garlic
- 1c olive oil
- 1 lemon – juiced
- salt
- pepper
- Toast
- 2c cherry tomatoes
- 2 medium sirloins – about .5lb each
- 2tbs butter
- 4–5 sprigs of fresh thyme
- salt
- pepper
- herb sauce
- ciabatta bread
- 1/2c feta crumbles
Instructions
- Herb Sauce
- Add all ingredients to a blender or food processor
- Blend until it reaches your desired consistency
- Add salt and pepper to taste
- Toast
- Season steak with salt and pepper
- In a large hot pan add olive oil
- Add seasoned steak to pan for about 2 minutes
- Flip the steak
- Add butter, thyme, and herb sauce
- Cook to desired temperature
- Slice into medium sized strips
- Add steak to toasted ciabatta bread that has been bathed in herb sauce and olive oil
- Top with arugula
- Sliced cherry tomatoes that have marinated in the herb sauce for about 30 minutes
- Finish with crumbled feta cheese on top
