Easy Chicken Rigatoni One Pot Meal

Ingredients

  • 2 tbs olive oil
  • 1.25 lb chicken breast cubed
  • 1/2 tbs salt
  • 1/2 tbs pepper
  • 1/2 tbs oregano
  • 3-4 sprigs of thyme
  • 1 zucchini medium and thinly sliced
  • 1 summer squash medium and thinly sliced
  • 1 onion small and thinly sliced
  • 1 c cherry tomatoes
  • 2 c baby spinach
  • 3 c dried rigatoni
  • 1 1/2 c chicken broth
  • 1/2 c heavy whipping cream
  • 3/4 c Shredded Parmesan
