Gluten Free Thumbprint Cookies

Ingredients

  • 1 1/4 c Bob's Red Mill 1 to 1 Baking Flour
  • 1/2 c Butter softened
  • 1/3 c Sugar
  • 1 Whole Egg
  • 1 tsp Vanilla Extract
  • Jam of choice

Instructions

  • Preheat oven to 350 degrees.
  • In a medium bowl, using a sturdy spoon, mix butter and sugar until completely combined.
  • Using a fork, beat in your egg and vanilla extract.
  • Mix in your Bob's Red Mill 1 to 1 Baking Flour until smooth and completely combined.
  • Measure out 2tsp of dough,  roll into a ball, and place on a lined cookie sheet.
  • Place about 2 inches apart.
  • Using your thumb, gently press each ball in the center to create a small bowl.
  • Chill for 10 minutes.
  • Place in the oven and back for 10-12 minutes.
  • Transfer your cookies to a cooling rack and let them completely cool.
  • Fill the center of each cookie with your favorite jam.
  • Enjoy!
