Spinach and Cheese Stuffed Salmon

Ingredients

  • 6 6-8 oz Salmon Filets
  • 1 c Cream Cheese softened
  • 1/2 c Feta Crumbles
  • 1/2 c Parmesan Cheese grated
  • 1 c Frozen Spinach
  • 1 c Cherry Tomatoes quartered
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1 tsp Oregano
  • 1/4 c Fresh Parsley chopped
  • 1 c Fresh Crab Meat optional

Instructions

  • Pre-heat oven to 350 degrees.
  • Rinse and pat dry each salmon filet.
  • Carefully create a "T" shaped slit on the flesh side of each fillet.
  • Sprinkle seasoning on each salmon filet, on both the flesh and skin side. Sit to the side.
  • In a large bowl, mix all of the remaining ingredients.
  • Place fillets skin side down onto an oiled pan or cast iron skillet.
  • Open each fillet and stuff with filling.
  • Bake at 350 degrees for 18-22 minutes or until the fish reaches your desired temperature.
